Charred Grapefruit Sour Recipe

1 1/2 oz. G4 Blanco Tequila
1 grapefruit
1/2 oz. rosemary simple syrup
1 egg white (or chickpea water)
1 oz. tonic water
2 dashes orange bitters
rosemary sprig (optional)


Grill 1/2 of fresh grapefruit and a few slices from the other half (to be used as garnishes). Juice the charred half grapefruit, and into a cocktail shaker filled with ice, tequila, rosemary simple syrup, egg white, and 2 dashes of bitters. Shake vigorously for 15-20 seconds. Then strain into a rocks glass with salted rim. Add ice to the glass, and top off with tonic water. Garnish with charred grapefruit slice and rosemary sprig (optional).
